Place a few handfuls of baby spinach leaves on a platter. Peel two grapefruit with a sharp knife and cut into segments. Top the spinach with sliced avocado, crumbled feta, the segmented grapefruit, a few mint leaves and chopped walnuts. Dress with a squeeze of an orange and a drizzle of olive oil.
